Craving chocolate?
Want a fun tasty treat to share?
These chocolate coconut almond goodies are a great option.
Makes 24 or more
20 oz bag Chocolate Chips (semi sweet)
7 oz bag Sweetened Coconut flakes
1- 2 teaspoons Olive oil
1- 2 teaspoons Light Corn Syrup
24 - 40 Almonds
Stuff:
Cookie sheet
Wax paper
Blender
Rubber spatula
Bowls and spoons etc.
Microwave
***Disclaimer depending on the size of coconut center you make or how much chocolate you dump on each, the number of treats will vary. I made over two dozen with this supply list and my first time skills. I probably could have used a mold or something to help keep things consistent. But these treats are fun and have the homemade feel. Who doesn't like extra chocolate.
First things First: Melt the Chocolate!
- Tip: I add a teaspoon or so of Olive oil to the bowl of chocolate chips and stir till they are covered.
- Caution: too much oil makes it not set up well and makes the chocolate melt in your hands more. Maybe try coconut oil because it sets up solid at room temperature.
- Tip 2: microwave on LOW power for a minute at a time...cook time 1:00, power level 4 or 5. Microwaves vary so learn how yours works. Be careful not to burn the chocolate by checking it more often. The oil helps protect it from burning and makes the chocolate smooth.
Next: Blend and Clump the Coconut.
Save a spoonful or two out and put the rest of the bag of coconut flakes in the blender or food processor. Blend until finely chopped, this will release some water and oil, but it's not enough to make it clump together, so add a few teaspoons of corn syrup. Stir in and try to make a ball or oblong clump squeeze it in your fist. Add more syrup if it won't stick together.
The Messy Part: Be a Chocolatier
Lay out the wax paper on a cookie sheet. Use the spatula to spread small rectangles patches of chocolate. More or less about inch by inch and a half.
Lay the clumped coconut in the center and sprinkle a pinch of non blended coconut flakes and add an almond.
Next dollop a spoonful of chocolate on top of each treat. Help the chocolate down over the sides make sure it meets up with the bottom layer to seal it.
Cool to set, you can hurry it up by placing them in the freezer.
